Store these no-bake energy bites in your gym bag for a pre- or post-workout energy boost, and keep them on hand in an airtight container for an afternoon snack that little fingers can grab too.
- 1 cup dates
- 1 cup walnuts
- 1/4 cup cocoa powder
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- sunflower seeds
- almond butter
- raw cacao powder
- shredded coconut flakes
Place dates in a medium bowl and cover with warm water. Let soak for 5-10 minutes to soften then drain.
Add drained dates and all remaining ingredients into a food processor and pulse for several minutes until mixture turns into the consistency of sand. Remove blade from the unit.
Form energy balls by pressing mixture into a small stainless steel scoop then roll in between your palms to form evenly sized bites.
Enjoy the bites at room temperature or let chill for 30 minutes before eating.
